My Grandma's Favorite Bread & Butter Pickles

My 92 year old Grandmother loves these pickles that I make for her.



    Bread and Butter Pickles

      15 cups sliced pickling cucumbers
      3 onions, thinly sliced
      1/4 cup coarse salt
      4 cups cracked ice
      2 1/2 cups cider vinegar
      2 1/2 cups sugar
      3/4 teaspoon turmeric
      1/2 teaspoon celery seeds
      1 tablespoon mustard seeds

Directions

    Combine cucumbers, onions, salt and ice in a large bowl.
    Mix well.
    Put a weight on and allow to stand 3 hours. (For a weight, I use a plate with a gallon bottle of vinegar or water on top of it).
    Drain thoroughly.
    Combine vinegar, sugar, turmeric, celery seed and mustard seed in a large pot.
    Add drained cucumbers.
    Place pot on medium low heat.
    Bring almost to a boil, but DO NOT ALLOW TO BOIL.
    Remove from heat.
    Seal in sterilized jars, 10 minutes in a hot water bath.
    Easy way to sterilize jars: Wash them well in hot soapy water.
    Dry them off.
    Put on a cookie sheet, right side up, at 225°F for 15 minutes.

My Salsa Recipe


My Homemade Salsa Recipe
8 cups tomatoes, peeled,chopped and drained
2 1/2 cups diced onions
1 1/2 cups diced green peppers
1 cup Jalapeno peppers chopped
2 Banana peppers chopped
6 Cloves of fresh garlic pressed
1 teaspoon Cumin
2 teaspoons Black pepper (Watkins)
1/8 cup canning salt
1/8 Cup of Sugar
1/3 cup of vinegar
1 (15 oz) can of tomato sauce
1(12 oz) can of tomato paste
1 fresh lime squeeze
1/8 cup chopped ciliantro (optional) Add at the end 

Directions
Mix all ingredients and bring to a slow boil for 10 min.
Seal in jars and cook in hot water bath for 10 min
Makes 6 to 7 pints
You can make it and eat it fresh with out canning just keep in jars in refrigerator
You can also freeze it...But I do not know if it will come out watery.
It is a very nice thick stick to your chips salsa....Enjoy....We LOVE IT

Beef Broccoli Stir-Fry




Beef Broccoli Stir-Fry

1 Cup Thrive Beef Chucks
1 Cup Thrive Broccoli
1/4 Cups Thrive FD Carrots
2 Tablespoons Thrive FD onion
1/2 Cup FD Bell Peppers
1/3 Cup of beef Stir fry mix
In a baggie place 1 cup Thrive instant Rice
place on top of jar

Beef Stir Fry Seasoning mix
1/4 cup beef bullion
3 Tablespoons corn starch
2 Tablespoons sugar
2 Tablespoons dry minced onion
1 Tablespoon Dry soy sauce powder
2 teaspoons dried parsley
3/4 teaspoon ground ginger
1/4 teaspoon crushed red peppers

Layer ingredients in a 1 quart wide mouth jar in order listed Add oxygen Absorber or vacuum seal the jar.

To Make
Add 4 cups of water to a skillet . Take out the baggie of rice and set a side. add jar meal to the water and let set for 10 to 15 mins simmer on low for 20 to 25 mins.
after starting the jar meal cook the rice in a separate pot... after the rice is done server jar meal over rice.

Homemade Cough Medcine




¼ t. Cayenne
¼ t. Ginger
1 T. Cider Vinegar (an organic one, like Bragg’s, is preferred.)
2 T. Water
1 T. Honey (use a locally produced raw honey, if possible.)

Dissolve cayenne and ginger in cider vinegar and water. Add honey and shake well. Take 1 T. as needed for cough.
